The first time we walked into Mistral, they had just gotten their roaster and were about to get ready to fire it up for the first time to roast their first-ever batch of coffee beans. That was almost a decade ago. A lot has happened since then: A lot of coffee has been roasted, new shops have been opened, and whenever a coffee conversation veers into Spanish roasters, Mistral is mentioned with almost absolute certainty. Mistral put Mallorcan roasters on the global map, a path several others followed. Nowadays, one cannot escape Mistral’s beans when looking for specialty coffee across the island. And why should one? Both their work on the espresso and the filter front is delightful.
